If there could be a guilt-free cookie, I believe this is it. The health benefits in both molasses and oatmeal begin with:

The recipe I’m giving you is my adjusted version. I’m not a ginger-bread lover so I replaced the 1/4 tsp of powdered ginger with a teaspoon of vanilla. I also made a few other healthy adjustments. The original recipe is featured in the book with my upgraded version next to it, showing how I converted a less healthy recipe into this.
Ingredients
– 1 cup unbleached flour
– 3/4 tsp baking soda
– 1/2 tsp baking powder
– 2 tsp cinnamon
– 1 tsp vanilla
– 1/2 tsp salt
– 3 T. butter
– 1/2 cup raw sugar
– 1/2 cup unsulphured molasses
– 2 eggs
– 2-3 cups of old fashioned oats, uncooked
Directions
Set oven to 350(f). Add butter, sugar, eggs, molasses & vanilla, blend completely. Blend or sift flour, baking soda, baking powder, salt & cinnamon; add into bowl. The dough is very sticky. Blend all ingredients well, then add oatmeal. (the amount of oatmeal will determine the texture of moist to more crunchy)
Bake for 10-12 minutes.
